Quinoa Stuffed Peppers

This is a very tasty meatless meal that will fill you up! I love the fact you can pretty much throw anything in the mix to stuff these peppers and it will still turn out. Tonight I put black beans, diced tomatoes, onions, celery, and chopped carrots in the stuffing mix.









Quinoa Stuffed Peppers
                                                                                    

2 red peppers
approx 2 cups cooked quinoa. Check out how to make it in the crockpot!
Black beans
Cheddar cheese

Split peppers in half and clean out seeds. drop pepper halves into boiling water for about 15-30 seconds. Remove from boiling water and place on paper towel to dry.
Season quinoa with taco seasoning, or any other spice you prefer. 
Arrange pepper halves cup side up in a baking dish. fill with quinoa, beans, and any other ingredient you would like.
Bake at 400* for about 20 minutes or until top of quinoa filling starts to brown. Sprinkle cheese on top and allow cheese to melt.
