Chocolate Chip Peanut Butter Cookies with Sea Salt

I've always heard of people putting sea salt on the tops of their chocolate chip cookies, but I had never tried it until today. It was delicious. It kind of reminds me of my favorite chocolate Dark Chocolate with a Touch of Sea Salt. I used natural peanut butter, you know the kind you have to stir in the oil when you first open it, so I reduced the butter and also got a creamier cookie in the end rather than the super thick dough the recipe would normally yield.





Chocolate Chip Peanut Butter Cookies with Sea Salt
                                                                      
How Sweet it is

2 cups all-purpose flour
1/2 teaspoons baking soda
8 tablespoons of salted butter, melted and cooled -  I used only 6 Tbs
6 tablespoons of creamy peanut butter, melted and cooled - I probably used more than this
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 1/2 cups chocolate chips
Sea Salt

Preheat oven to 325 degrees F. Add butter and peanut butter to a microwave safe bowl, and heat in 30 second increments until melted. Let cool completely.
In another bowl, mix the cooled butter/peanut butter and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, depending on how much peanut butter you used, but it will come together. Fold in chocolate chips.
Scoop out dough with cookie scoop. Place on a baking sheet two inches apart. Grind or sprinkle a little bit of sea salt over top of cookies. Bake for 10-12 minutes or until the edges are slightly brown. Do not over bake.
