Triple Threat Cookies

Chocolate chocolate chip cookies with peanut butter centers. Kalvin made and named this cookies. I argued that the triple part doesn't really make sense but he said it works because there's chocolate, chocolate chips, and peanut butter. We originally were going to make a similar cookie from picky palate but one, I'm not crazy about her choc chip cookie recipe, and two, most importantly we didn't have enough cocoa powder. So I made up these cookies based on the picky palate ones. I used these thick chocolate chip cookies, threw in what we had for cocoa powder, and used up the left over peanut butter filling from these muffins.  





Triple Threat Cookies
                                                         
Inspired by Picky Palate


2 cups all-purpose flour
½ tsp. baking soda
½ tsp. salt
1/4 cup cocoa powder
1 stick unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 large egg plus 1 egg yolk (I had one small egg, so I used all of that plus a regular one)
2 tsp. vanilla extract
1 ½ cups semi-sweet chocolate chips (I probably used more)

1 cup creamy peanut butter
3/4 cup powdered sugar


Adjust oven racks to upper and lower-middle positions.  Preheat oven 325°.  

With electric mixer, or by hand, mix butter and sugars until thoroughly combined.  Beat in egg, yolk, and vanilla until combined (Beat it good).  Add dry ingredients and beat at low-speed just until combined (Barely mix it).  Stir in chocolate chips.

Using a cookie scoop shape chocolate dough, squish peanut butter mix in the middle. Bake until cookies outer edges start to harden yet centers are still soft and puffy (approximately 10-14 minutes).  Do not overbake.
