Chocolate Banana Peanut Butter Surprise Muffins

I saw this recipe today and it was perfect because I had two dead bananas needing to be used up. These were delicious. They kind of stuck to the cupcake papers, I still don't know why, but maybe they wouldn't  stick if you used the foil cupcake papers. Either way, so good!

PS- after the muffins had completely cooled they didn't stick to the paper anymore.





Chocolate Banana Peanut Butter Surprise Muffins

1 1/4 cups creamy peanut butter
1 cup powdered sugar
2 large ripe bananas or 3 small
1/4 cup granulated sugar
1/2 cup light packed brown sugar
1 large egg
1 cup buttermilk
1 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup cocoa

1. Preheat oven to 350 degrees F. and line a 12 cup muffin tin with cupcake liners.
2. Place peanut butter and powdered sugar into a medium bowl, mixing until well combined.
3. In a large bowl mash bananas until well mashed. Stir in sugars, egg and buttermilk until well combined. Slowly add flour, baking soda, salt and cinnamon until just combined.
4. Divide batter in half into 2 bowls. to one bowl add the cocoa.

5. With a small cookie scoop, scoop chocolate batter evenly into the bottom of lined cupcake cups filling 1/3 of the way. Layer on a tsp or so of peanut butter mixture. Top off with regular batter.6. Bake for 18 to 20 minutes, until cooked through. Let cool completely and serve.

*Depending on how much mashed banana you used, you might have to add a little extra flour. It should be the consistency of thicker cake batter, pourable yet not liquid-y.
