Zucchini Bread

I made zucchini bread yesterday. It was from a healthy cooking magazine where they "made over" the recipe so it had less calories and fat and sodium etc. It turned out really tasty.

Chocolate Chip Zucchini Bread




Makeover Zucchini Bread
                                                                                                                                          

1 1/2 cups sugar
1/2 cup unsweetened applesauce
2 eggs
1/3 cup canola oil
3 tsp vanilla
3 cup all purpose flour ( I did one cup wheat)
2 1/2 tsp cinnamon
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
2 cups shredded zucchini
3/4 cup chopped walnuts ( I use pecans because walnuts are too bitter for me)

In a large bowl, beat the sugar, applesauce, eggs, oil, and vanilla, until well blended. Combine the flour, cinnamon, baking powder, salt, and baking soda; gradually beat into sugar mixture until blended. Stir in zuchini and walnuts (or pecans).
Transfer to 2 8inx4in loaf pans coated with cooking spray. Bake at 350*F for 45-55 minutes or until a toothpick  inserted in the center comes out clean. cook for 10 minutes and then remove from pans.

I did one loaf regular and one with chocolate chips. The funny thing was the choco chip loaf needed more baking time than the regular loaf. The both ended up being delicious though.

Just for fun: 1 serving of this recipe is 168 calories and 6 g fat compared to the original recipe that had 240 calories and 12 g fat.
