Baked Potato Soup

This soup is one my mom would make when I was growing up. It's a really nice thick creamy potato soup. This recipe is actually halved but still ends up making a lot. This time I added kidney beans for extra protein.

Baked Potato Soup



3 large potatoes
1/3 cup butter
1/3 cup flour
3 cups milk
1/2 tsp salt
1/4 tsp pepper
2 green onions, chopped
6 slices bacon, fried and crumbled
1 cup shredded cheddar cheese
1/2 - 1 cup sour cream

  • Bake potatoes in microwave just until soft. Peel off skin. Cube potatoes and set aside.
  • Melt butter in large pot. Add flour. Whisk in milk slowly. Continue to stir until smooth, thickened and bubbly.
  • Stir in salt, pepper, onions, bacon, and cheese. Stir until heated and cheese melted. Add in potatoes and sour cream. Stir gently.
