Refrigerator Pickles

We have an abundance of cucumbers right now, so I decided to try out this recipe. Note that I HATE dill pickles and only like cucumber chip aka bread and butter pickles. And these taste exactly like bread and butter pickles. yay!










Refrigerator Pickles

3 C sugar
3 C vinegar
~4 T pickling salt
1/2 tsp. turmeric
1 tsp. celery seed
1 tsp. mustard seed
2 onions, sliced
1 gallon sliced cucumbers

Mix all the ingredients together in a very large bowl.

Prepared cucumbers by washing, cutting off the ends, and thinly slicing. Mix cucumbers into rest of ingredients. Let sit for a few minutes. Transfer into jars with tongs and once all jars are filled with pickles carefully fill the jar with the brine (juices the pickles were just in).

Place lids on jars and store in refrigerator.
