Savory Zucchini Bread

I've been wanting to make this bread for a long time now. I'm glad I finally got some time to do it! Delicious bread!! Very soft, like a wheat bread but with more flavor. Oh by the way mine kind of fell in the middle a little bit because I let it rise a little too long before baking, but it was still delicious.

Ingredients
  • 2 1/4 tsp. yeast
  • 1/2 C buttermilk
  • 1 T olive oil
  • 3/4 C shredded zucchini
  • 1 T minced onion
  • 2 T colby jack cheese, shredded
  • 1 heaping T sugar
  • 1 tsp. salt
  • 1/8 tsp. lemon juice
  • 1/4 C oats
  • 1 C whole wheat flour
  • 1 1/2 C bread flour
Directions
Heat buttermilk slightly until about 100*F. Add a pinch of sugar, the yeast and the oil.

In a separate bowl add zucchini, onion, cheese, sugar, salt, and lemon juice. After yeast has sat in buttermilk mixture for a couple minutes add to bowl with zucchini. Mix.

Slowly add in dry ingredients. Mix until dough forms. Knead by hand or with Kitchenaid dough hook for about 5-10 minutes until dough is well formed.

Let dough rise, until double in size.

Punch down and shape in to loaf. Place in greased bread pan. Let rise again until doubled.

Bake at 350*F for about 30 minutes, until lightly browned, and sounds hollow when tapped.
