Banana Cake

This is one of my mom's recipes. The version I have is a copy of the original written on wide ruled paper in her handwriting. This cake is very moist and delicious and I always make a cream cheese chocolate frosting to go on top.




Banana Cake
                                                                                  

1 cup sugar
1/2 cup butter - I used a little bit less
1 cup mashed banana
2 eggs
1 tsp vanilla
1 1/2 cup flour- I did 3/4 cup wheat flour, 3/4 cup white
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup milk

Combine butter and sugar. Add in banana. Add eggs and vanilla. Mix well. Combine flour, baking powder, baking soda, and salt in a separate bowl. Alternate flour mixture and milk, a little at a time.
Pour into a 9x13 pan.
Bake 350* for 25 minutes

Chocolate Cream Cheese Frosting
1 T butter, softened
2 oz Cream cheese
dash Vanilla
1/8-1/4 cup Cocoa powder
1 cup + Powdered sugar

All measurements are approximate. Whip butter and cream cheese. Add in vanilla and cocoa powder. Add in enough powdered sugar to get the consistency you want. If it's too thick add more liquid ingredients, if it's too thin add more powdered sugar.

For this cake you don't want the frosting to be too thick because the cake is fairly delicate on top and will stick to the thick frosting, get crummy, and make a mess. But don't make the frosting so thin that is can pour either.
Spread your happy medium soft frosting on the cake gently, cut, and enjoy.

I always store the cake in the fridge if it has cream cheese frosting, I'm sure you don't exactly have to, but I always have and it's very tasty cold too.
