Recipes for Emily

I told Emily I would email her some quick and easy go-to recipes. I haven't gotten around to it yet, so I figured I would type them up on the blog so I would also have a digital record of them.



Italian Chicken -So good! The chicken really soaks up the flavor.
Marinate chicken breasts in Italian dressing (yes the stuff you would normally put on a salad.) for at least an hour. Bake in the oven, fry in a pan, or my fav grill it.
Serve with a pasta or salad or rice dish.

Cheesy Chicken & Rice
1 can cream of chicken soup
1 1/3 cups water
3/4 cup uncooked rice
2 cups fresh or frozen veggies
1/2 tsp onion powder
chicken breasts
1/2 cup cheese

Sitr soup water, rice, veggies, and onion powder in 12x8 shallow baking dish. Top with chicken. Bake 375 for 45 minutes or until done. Top with cheese.

Hot fudge pudding cake - This is my ABSOLUTE FAVORITE with ice cream. Its quick, easy, and always turns out.
1 cup flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp ground cloves (this is my add in. I think it really gives the dish depth, plus I love cloves.)
1/2 cup unsweetened cocoa
1/2 cup milk (the original recipe says whole milk..... I think this is the first time I have ever realized it says "whole" milk. I just used my regular fat free milk and it works just fine)
2 TBS melted butter
1 tsp vanilla
1 cup packed brown sugar

Preheat to 350. Grease 8X8 baking dish.
In a bowl combine flour, sugar, baking powder, salt, cinnamon, cloves, and 1/4 cup cocoa. Whisk in milk, butter, and vanilla just until smooth. spread batter in baking dish.
In small bowl mix brown sugar and 1/4 cup cocoa and sprinkle evenly over batter.
Pour 1 1/2 cups boiling water over mixture. Do not stir.
Bake 30 minutes. cool 10 minutes. Batter separates into cake and pudding layers. Serve warm with vanilla ice cream.

Cranberry Chicken
1 can whole berried cranberries
1 envelope Lipton dry onion soup mix
1 small (8 oz) Russian dressing

Mix all ingredients in a bowl. Pour over chicken in a baking dish. Bake 350 for 40 minutes- 1 hour until chicken is done.
Serve with rice.

Creamy Chicken Enchiladas –These are so good. I have posted the recipe here.

Beef Taco Skillet
1 lb ground beef
1 can tomato soup
½ cup salsa
½ cup water
6 flour torillas – cut in 1” pieces
½ cup shredded cheddar

Cook beef in skilled until well browned. Stir in soup, salsa, water, and tortillas. Reduce heat to low and cook for 5 mins. Top with cheese.

German Pancakes – easy recipe with few ingredients.
1 cup milk
1 cup flour
7 eggs
¼ tsp salt
4-6 TBS butter

Beat eggs, then add milk, flour, and salt while butter is melting in a 9x13 inch pan. Pour egg mixture into melted butter and bake 425 for 20-25 minutes. Serve with syrup, jam, or strawberries.

Spinach stuffed chicken – to die for!
Fresh spinach
Feta cheese
Chicken breasts

Slice a pocket in chicken breasts. Stuff with spinach and feta. Season outside chicken with any seasoning you would like. Bake 400 until chicken is cooked through.


Kalvin and I always enjoy Ling Ling’s potstickers (you can get them at costco). Steam them a little in a frying pan and then fry them with a little oil to give them some crisp. We love these with rice and sweet chili sauce.

Chili over potatoes - just as it sounds baked potato and chili with a little cheese on top.

Taco Salad
Taco seasoned ground beef
Doritos- Nacho Cheese
Kidney beans
cheese
Lettuce
Layer Doritos, lettuce, ground beef, kidney beans, and cheese.

Chicken Salad Sandwiches
Canned chicken from costco
Miracle Whip
Paprika
grapes or craisens
chopped pecans
