Vegan, so no eggs or butter, but yet they taste like a normal cookie and have a normal texture.
Vegan Peanut Butter Chocolate Chip Cookies
1 cup sugar
1 3/4 cups flour
1/2 cup brown sugar
2 tsp baking powder
1 tsp salt
1 1/2 tsp vanilla extract
1 tsp cinnamon
1/2 cup unsweetened applesauce
1/4 cup canola oil or coconut oil softened
1/3 peanut butter
2 cups chocolate chips
1/4 tsp cayenne
1 cup sugar
1 3/4 cups flour

1/2 cup unsweetened applesauce
1/4 cup canola oil or coconut oil softened
1/3 peanut butter
2 cups chocolate chips
1/4 tsp cayenne
Combine sugars, peanut butter, and
coconut oil. Add applesauce, and vanilla.
Add in flour baking powder, salt, cinnamon, cayenne only mixing until
combined. Add chocolate chips.
Put dough in refrigerator while you
preheat the oven to 375*F. Scoop dough on to cookie sheets lined with parchment
paper. Bake for 8-10 minutes.
