Peanut Butter Blossoms


Kalvin has been requesting these cookies for awhile now. I don't think I have ever actually made them myself, but I've had them tons of times. I made mine with dark chocolate kisses! I also rolled them in cinnamon and sugar rather than just plain sugar like some recipes do.




Peanut Butter Blossoms
                                                       
Bake at 350

1/2 c. butter
3/4 c. creamy peanut butter (I use Skippy Natural)
1/3 c. sugar (plus more for rolling)
1/3 c. light brown sugar
1 egg
1 tsp baking soda
1/2 tsp coarse salt
1 tsp vanilla
1 & 1/2 c. unbleached, all-purpose flour
Cinnamon (for rolling)
Hershey's Kisses (7 ounces)

Line cookie sheets with parchment paper.  Preheat oven to 375.

Using the paddle attachment, beat the butter and peanut butter until blended.  Add both sugars and beat until light and fluffy.  Add in the egg and vanilla, then add baking soda, salt and mix until thoroughly combined.  Add in the flour in 3 additions. Scrape the bottom and side of bowl as needed.
Mix cinnamon and sugar in a small bowl, ratio isn't too important, do either 1:1 or 1:2. Shape the dough into 1-inch balls and roll in the cinnamon/sugar.
Place coated dough balls on the parchment-lined sheets.  Bake cookies until the are a very light golden color, about 10 minutes.  (Meanwhile, unwrap the kisses.)
Remove the cookies from the oven and immediately place a kiss on top of each hot cookie, pressing down slightly. Put back in oven for about 1 minute more.

  1. Dang it. I just went to the store. I'm not huge on making cookies these days (they're not super baby friendly--all those trips to the kitchen!) BUT dark chocolate kisses are already on the list for the treat of the week next week!!
