Kalvin made these muffins the other days and they were delicious and beautiful. I'm glad he could pick up my baking slack. I seriously haven't baked anything since I started working, but there are so many things that are on my list to make! I love that these turned out big, beautiful, and hearty.
Banana, Pecan, Chocolate Chip Muffins
Muffins Galore
2 cups self rising flour (or make your own out of AP flour. 1 cup self rising = 1 cup AP flour + 1 1/2 tsp baking powder + 1/2 tsp)
2 tbs light brown sugar
1/2 cup pecans, chopped
generous 1/2 cup chocolate chips
2 ripe bananas, peeled
3 tbs vegetable oil
2 eggs, lightly beaten
1/2 cup sour cream
Preheat oven to 400*F. Grease 12 cup muffin pan or line the cups with paper muffin cups.
Mix together the flour, sugar, pecans, and chocolate chips in a large bowl. In a separate bowl, mash the bananas until fairly smooth, then stir in the vegetable oil, eggs, and sour cream.
Add the wet ingredients all at once to the dry ingredients, and mix briefly just until combined.
Spoon batter into the prepared muffin cups, dividing evenly.
Bake for 20 minutes or until risen and golden. Cool in pan for 10 minutes, then turn out onto wire rack.
